When cooking pasta, reserve about a cup of the cooking water when it’s done. Add sauce to cooked pasta and add in the reserved water and mix well. The starch in the water helps the sauce to stick to the pasta.

PREPARATION:

  1. In a large dutch oven, drizzle in olive oil and heat on medium.
  2. Add carrots, celery, and onion.
  3. Season with Salt and Pepper.
  4. Saute until translucent and fragrant, add garlic and continue to sauté 1 min.
  5. Add in diced tomatoes and tomato paste.
  6. Cook on medium heat stirring frequently for about 20 minutes and it begins to thicken.
  7. Stir in parsley, basil and bay leaf and continue to cook another 10 minutes.
  8. Remove bay leaf and serve.

  • 4 carrots, finely chopped
